Today, I was on the elliptical for 40 minutes!

I burned 400 calories and didn’t decrease the incline or resistance when it got up to the higher areas. 

At the beginning of the semester it was hard for me to stay on for 20 minutes, and I’d be lucky if I burned a bit over 200. I’m just really proud.

Vegetable pasta. Favorite new dish? Definitely.

Ever since my obsession with carrot pasta first began, I have been searching for other vegetables to make a “pasta” dish. Luck was on my side because I stumbled upon this beautiful picture from the Kitchen Confidante. The different colors were a feast to my eyes! Unlike the Kitchen Confidante, I did not make a sauce, but I am sure the noodles would have tasted amazing with anything since the vegetables absorb lots of flavor. Maybe next time? This dish is unbelievably easy to make and healthy! It took me a little over fifteen minutes to make.

  1. Wash the vegetables, then dry. 
  2. Use a julienne peeler to form noodle shapes from the zucchini, squash, and carrot. I peeled the entire vegetables.
  3. Steam the noodles.
  4. Once cooked, place the noodles in a bowl and top with freshly grated parmesan cheese and some lemon juice.

Aqua Zumba!

So, tonight I tried Aqua Zumba for the first time with my friend Meg. I can’t lie, I felt a bit ridiculous, but it was a lot of fun. My school has a bunch of fitness classes you can take for free, and the regular Zumba conflicts with my class schedule, so I thought I’d try this one out. According to Livestrong it burns a bit almost 300 calories for a one-hour class, and mine was 45 minutes so I’m just round that to a bit over 200. It definitely doesn’t feel like a normal workout though, it’s just fun dance moves to awesome music.

They do it two times a week, so I think I’m going to try and implement them into my weekly workouts. I’ve been doing 30-minute elliptical workouts (on “fat burner” mode) whenever I can, but not that life has gotten a bit less stressful I’m going to try and go more regularly (at least 4 times a week). That’s usually good to burn about 200-300 calories a day. Eventually, I want to last for the full hour. 

Also, I noticed that the belt on my coat is becoming looser. Before, I would have to use the first ring, and now I can use the third or fourth hole! And the bathing suit I recently bought is definitely less tight. 

However, I have been kind-of awful at sticking to the diet this week. So many bad foods went into my system! However, I’m trying not to dwell on it and to just look forward to this upcoming week where I will eat better and work out more.

One and a half months until… swimsuit season?!

So, my roommates and I just booked a spring break cruise… TO THE BAHAMAS! I’m so excited, but not so excited about the whole swimsuit thing. I’m definitely not going to be down to my goal by then, but I’m going to work really hard to lose some weight by then. 

This past week I was pretty good. I went to the gym for 3 days and worked out about 40 minutes each day. Life ended up getting so stressful and crazy by the end of the week though, I just didn’t have time to go.

This weekend, I also disappointed myself in how I ate. I just need to get out of the college mindset that weekends=junk food and alcohol. 

For the rest of the week I was pretty good though. I went to the grocery store and bought tons of fruits and veggies. I’ve planned out meals, and started snacking better. Breakfast is now a thing I do every day, and I definitely notice a difference. 

Today was a good day…

I went to the gym, counted calories, and made all-around great choices. Ok, so, I ended up eating half a tiger brownie just now, but I’m still under my daily calorie limit! I’m sore and tired, but I just feel really great about what I’m doing. 

Now, if only I could feel this happy with my classes this semester.
